Basically, architecture is how something looks, feels, and works after it is built.
Why use architecture?
Architecture can be used for several different reason. These reasons can be used at the same time.
Gameplay:
One reason is to better the quality of gameplay. How would you do this? Well, there are many different reasons. Some include, breaking lines of sight, landmarks, and making a general purpose work more efficiently.
Aesthetics:
Architecture can make a map look better. It can further the theme. It can also attract players to use that area.
As you can, see it is harder to ask why not use it? rather than why use it?.
